The city’s food history dates back to the time when Venice was a major stop for the silk and spice routes, the ingredients imported from the Middle East & Asia gradually influenced the local flavors here. Food and drinks have played a major role in Venetian culture. The cuisine is mainly divided into 3 regions, the coastal areas, plains, and mountains. Most of the Venetian cuisine use butter, olive oil, vinegar and green sauce in most of their dishes. The staple food of the city is Polenta, which is boiled cornmeal served as porridge or solidified into a loaf.  For the main course, potatoes, pork, chicken, pumpkin, mushroom, and peas are often combined with base products like Risotto and different varieties of pasta to create authentic Venetian dishes.
