Venture out to Alphonse and Amirantes which are havens of fly fishing and bottom fishing. You can get large groupers weighing more than 40kgs. As for the equipment, most of the boats provide good fishing equipment, but if you are particular it is better to bring your own. Also, make sure to avoid Cocos Island, Bay Port Launay and the Sainte Anne Marine National Park as they are protected waters. Make sure you understand the rules to enjoy fishing in Seychelles.
